That's what my sister called it!

I got my recipe from Laura Vitale, who is one of my favourite chefs to watch. I might even say more than I like Nigella Lawson. She makes everything simple and I like that she does not dump a truckload of sugar into her recipes.

When they were fresh out of the oven, they were nice and fluffy, as bread should be. Unfortunately, when it cooled down, they became a little hard. I may have kneaded it a little too long. Will remember to not overdo it when I next make these.

Because the recipe makes for 16 rolls, I have been eating these for breakfast for the past week. My dad likes to warm this up in the microwave for about 30 seconds. And I agree that this makes it better because it becomes soft and fluffy again.

Just 5 minutes ago, I decided to make a quick bread pudding with the rolls. For this, I tore a roll up into bite-sized chunks and poured milk into the bowl to cover the chunks about halfway. Microwaved this for 40 seconds and ta-dah! A quick cinnamon roll bread pudding. Will be having this for breakfast tomorrow if it isn't too hot!

Recipe from: Laura In The Kitchen

Makes 12 cupcakes

Ingredients:
Pumpkin Spice Cupcake
1 cup sugar
1 cup all purpose flour
1/3 cup vegetable oil
2 eggs
1/2 tsp vanilla extract
3/4 cup pumpkin puree
1 tsp pumpkin pie spice
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Cream Cheese Frosting
2 cups icing sugar
110g cream cheese at room temperature
2 tbsp unsalted butter at room temperature
1 tbsp milk (to thin out frosting if needed)
1 tsp vanilla extract

Steps:
  1. Preheat the oven to 180 degree Celsius.
  2. Cream the sugar, vegetable oil, vanilla, eggs and pumpkin puree.
  3. Add the flour, pumpkin pie spice, salt, baking soda and baking powder, and mix just until everything is combined. Do not over mix.
  4. Bake for 20 to 22 minutes.
  5. Cream all the ingredients for the cream cheese frosting together.
  6. When the cupcakes are cooled completely, frost them.

Recipe from: Laura In The Kitchen

Makes 12 cupcake sized bites.

Ingredients:
For the brownie:
2/3 cup dark/semi-sweet chocolate chips
55g unsalted butter
2 eggs
1/8 tsp salt
1/2 tsp vanilla extract
2/3 cup all-purpose flour
1 tbsp cocoa powder
3/4 cup sugar

For the cheesecake:
85g cream cheese at room temperature
1.5 tbsp sugar
1 small egg yolk

Steps:
  1. Preheat the oven to 180 degrees Celsius.
  2. Melt the chocolate and butter in the microwave and mix well.
  3. Beat the eggs and sugar until light and foamy.
  4. Add the melted chocolate and butter mixture, and vanilla to the eggs and sugar, and mix together.
  5. Sift in the flour and cocoa powder, and add the salt. Mix everything together until it is combined.
  6. Line a cupcake tray with liners and fill 2/3 of the liner up with the brownie batter to about.
  7. Cream the cream cheese, sugar and egg yolk.
  8. Using a tea spoon, top the brownie batter off with the cream cheese mixture.
  9. Bake for 20 to 22 minutes.
  10. Serve slightly warm.
It was really good when it was slightly warm! Now craving for another but I'll hold out for another hour :D
